Vermicelli ( Semiya/ Sevaiyan ) Kheer Recipe

What is Holi without a special sweet dish!

Kheer is a traditional Indian dessert prepared mainly during festivals. It can be prepared with rice, oats, vermicelli, sabudana or poha. Vermicelli kheer is my favourite.

Kheer is very easy and can be prepared quickly. So whenever you have unexpected guests😉, don't give a second thought go ahead and prepare it.

Let's look into this simple recipe.

Ingredients

  1. 1/2 cup broken vermicelli (sevaiyan)
  2. 3-4 tablespoon ghee
  3. 2 cups of hot full fat milk
  4. 3/4 th cup sugar
  5. 3-4 saffron strands
  6. Cardamom powder
  7. Slices of dry fruits like almond, cashew, raisins, pistachio according to your choice.

Servings: 4

Cooking Time: 20 minutes

Cuisine: Indian

Method

  1. Heat ghee in a container.
  2. Add vermicelli and saute on low flame for 4-5 minutes till it turns light brown.
  3. Add 1 cup of water and 1/4th cup of milk.
  4. Let vermicelli cook for 4-5 minutes.
  5. Add sugar and remaining milk. Mix well and keep stirring continuously.
  6. Add cardamom powder and stir it well.
  7. Garnish it with slices of dry fruits.

Note: You can saute the dry fruits in ghee before adding it to the kheer to make it more delicious.

Serve it hot or chilled according to your choice.
